Great asado sides and salsas from the Bébé Voyage around the world series!

This week we continue our culinary travels by flying all the way to Argentina to experience an asado! Family, friends, and delicious food is always a great combination; so we have gathered a couple great recipes for you, in order to have your very own asado!

Argentina is the eighth-largest country in the world and covers most of the lower part of South America. Argentina is bordered by Uruguay, Brazil, Paraguay, Bolivia, and Chile. The country is known for exporting some of the highest quality wine, world-famous soccer players, and of course beef.

    ASADO

Argentines are very passionate about their asados (Argentine BBQ). The star of any asado is of course the high-quality Argentine beef ribs and chorizo cooked over smoldering wood coals. If you are not able to find a woodfire grill or argentine beef one easy way to bring the flavors of Asado to your kitchen table is the must-have sides/salsas found in every parrilla (Argentine restaurant). Those are of course chimichurri and Criolla.

    Ingredients

    Criolla

    • 1 large red bell pepper (diced very small)
    • 2-3 Roma tomatoes (diced very small)
    • 1 medium sweet onion (diced very small)
    • 3 tbsp corn oil
    • 2 tbsp apple cider vinegar
    • ½ tsp salt

    Method

Mix all ingredients in a mixing bowl just before serving

    Chimichurri

    • ⅓ cup flat-leaf parsley (finely chopped)
    • 4 garlic cloves (finely chopped)
    • 2 tbsp paprika
    • 1 tbsp chili flakes
    • 2 tbsp dried oregano
    • ⅓ cup of corn oil
    • 3 tbsp apple cider vinegar
    • 1 tsp sea salt

    Method

Mix all ingredients in a bowl a few hours or even the day before serving to enhance the flavor.
