Tunisia is a country in the Maghreb region of Northern Africa. It is bordered by Algeria to the west, Libya to the east, and The Mediterranean Sea to the north with Italy just a short 150km across the Strait of Sicily. Tunisia’s history is ancient, dating back to 500 BC with the creation of Carthage up to stone age settlements dated at 200,000 years. 

Shakshuka

Shakshuka is a one-pan dish of eggs poached in tomato sauce with herbs and spices. The true origin of this dish is heavily disputed and is claimed by countries all around the Mediterranean and Middle East. The one thing all of these countries agree on is that shakshuka is delicious. 

Ingredients 

• 2 tbsp olive oil
• 1 tsp sea salt (more or less to taste)
• 2 tsp paprika 
• 1 tsp cumin
• 1 tsp ground coriander seeds
• ½ tsp chili flakes (more or less to spice preference)
• 1 large red bell pepper diced
• 4-5 cloves garlic diced
• 1 large white or yellow onion diced
• 5-6 medium Roma tomatoes diced
• 500 ml can crushed tomatoes
• 6 large eggs 
• 1 tbsp chopped parsley 

Method 

• In a large saucepan over medium/high heat, add olive oil and onions and saute for 1 minute.
• Add garlic, diced bell pepper and all the spices (salt, paprika, cumin, coriander, chili flakes) stir well, and saute for another 2-3 minutes.
• Add the fresh and crushed canned tomatoes and stir well. Reduce the heat to medium and simmer for another 5 minutes. 
• With the back of a spoon or ladle make six small wells in the sauce and crack a fresh egg into each. Cover the saucepan and simmer for 5 minutes or until the whites are cooked. If you don’t want runny egg yolks, cook another 2-3 minutes after whites are cooked.
• Remove from heat, letting the pan rest for another 2-3 minutes, and sprinkle the top with freshly chopped parsley.
• Serve with pita bread or sourdough.

• Remove parsley from stems
• Measure spices (under adult supervision)
• Dice tomatoes (under adult supervision)
• Peel and dice onions (under adult supervision)
• Peel and dice garlic (under adult supervision)
• Dice red pepper and remove seeds (under adult supervision)
• Chop parsley (under adult supervision)

7+ 

• Remove parsley from stems
• Measure spices (under adult supervision)
• Dice tomatoes (under adult supervision)
• Peel and dice onions (under adult supervision)
• Peel and dice garlic (under adult supervision)
• Dice red pepper and remove seeds (under adult supervision)
• Chop parsley (under adult supervision)
• Crack eggs and place in the saucepan (under adult supervision)
• Add ingredients to the pan (under adult supervision)
